Memorial Day is next Monday, which kicks off the outdoor cooking season. Last summer we showed you how to become a grill guru; this summer we’re going to show you how to become a BBQ pitmaster. To do so, I spent the day with my friend Karl Engel, head chef of Pigcasso BBQ here in Tulsa, OK filming him smoke some delicious, delicious meat. Every day this week, we’ll be posting a video with different tips and techniques on how to smoke different kinds of meat. Watch them, follow Karl’s advice, and you’ll have all the neighbors at your door begging you for a taste whenever you fire up the smoker.
