How to Make Jerky Without Any Special Tools

Jerky. It’s delicious. Too bad a lot of the store bought stuff is made with artificial preservatives and MSG. Which is why it’s cool that Primer Magazine has a great article on how to make some yourself, no special tools needed. Happy jerky making.

Honestly, I dislike making jerky with the oven. The idea is to preserve/disinfect the meat with salt, then use a dry method to dry it out. Good Eats does this with silicon air filters and box fans. No cooking used. The oven ADDS moisture… it’s like the amazon, not like the sahara.

Any idiot can make jerky with a rack of some sort, a box even cardboard, and a 100 watt light bulb. A real light bulb not the pieces of crap that the government is shoving down our throats. The key to good tasting jerky is what you marinate it in. I like to use Worcestershire sauce, liquid smoke – hickory flavored, salt and pepper, red pepper flakes, and usually ground jalapeno. Obviously I like it spicy. I soak it in the marinade for a couple of days in the fridge then spread it on the racks and turn on the heat until its dry. Store it in something air tight and it’s good for ages.

Been doing a lot of research on beef jerky recipes. Since watching the Alton Brown jerky episode, I have been keeping the thermostat low as I can on my dehydrator, I think it is a lot better dried versus “cooked”

Just my preference…..
