Gordon Ramsay also has an entire video on youtube on several ways to oven roast a turkey incase you want to go the extra mile.

For juicier turkey breasts, roast for the first 45 minutes normally, then flip the bird breast down for the remainder. Keeps all the juices from slowly draining out of the breasts.

Low and slow is no way to go. The fat just rolls off and the skin doesn’t get nearly as crispy and delicious as it could.

Better method: 500 degrees for the first 30 minutes, then reduce the temperature to 350 degrees (cover the breast with tin foil) and roast until a probe thermometer inserted into the deepest part of the breast reads 161 degrees. Yields perfectly cooked dark and white meat.

168 is a little low for the thigh, and it might come out a little pink, I try to shoot for about 175 in the thigh. Problem is: when the thigh is 175, the breast is overcooked. Here is how to solve this problem.

You should let the turkey come up to room temp. before putting it in the oven. An even better idea is to put an ice-pack on the breast while it is coming up to room temp. Then you can let the thigh come up to about 175 and the breast will be at a much better 160 (after resting, you’ll get about 180 in the thigh and 165 in the breast. Perfect).
